Summer means mango season in the Philippines. And while I love mango shakes and ice cream, I also love salads and this mango dressing is one of my favorite summer dressing. Adding sesame oil provides a nice smell and nutty taste.
This is a no-fuss, easy dressing- all you need is a food processor or blender.
You will need:
1 large, ripe mango
2 cloves garlic (crushed or minced)
1/2 teaspoon pepper
a pinch of salt
1 teaspoon sugar or honey
1 tablespoon sesame oil
Procedure: blend together. Choose your greens. Enjoy!
My sister and I have been addicted to pancakes lately. But we want the healthier kind, so we add different vegetables depending on what’s available in the kitchen..Or what’s cheaper for the week. Today, I use the following:
1/4 small carrots, julliened
1/4 small red bell pepper, julliened
chopped 1 large stalk onion leaks
2-3 pieces potatoes, sliced very thinly
1 small piece onion, chopped
2 large eggs
basil powder (I used an organic kind, purchased from an organic veggie store in the market)
1/2 pack Crispy Fry breading (spicy..garlic flavor is also a very good choice)
1 small can of Century Corned tuna (spicy)
1 cup flour
1 cup oatmeal
1 tbsp sesame oil (can be omitted)
salt to taste
3 tbsp ketchup
1.) Mix everything! If you feel that it’s a little bit try, you may add water. I prefer it really crispy so I don’t add water.
Today, I will make a non-traditional Pinoy “torta”. The very common torta in the Philippines would be the”Tortang Talong”, which of course uses eggplant as its main ingredient. It is fried with some eggs and optional onions, tomatoes and sometimes with pork. I made this a healthier version since I love vegetables. You will need the following:
Put everything together and fry in cooking Oil. ( I normally use regular Canola oil. The result is this, which I cut using flower and heart-shaped cookie cutters.
As for the dipping sauce, I will post a picture later. But you need the following:
Kalamansi or Lemon
Chopped white onions
Chilli flakes (optional if you don’t like spicy sauce)
1.) Lettuce (combination of iceberg, cultivars, romaine…Romaine for me is the best though)
2.) 1/2 diced cheese
3.) fried bacon
4.) Turnips (1 big pc is enough)…SINGKAMAS in other words :0)
5.) Mangoes (in season during summer)
Optional: tomatoes, julienned carrots, cucumber
For the dressing.
In the picture I used Ladies Choice Light mayo, ground pepper, mustard, sesame oil and seeds.

This is one of the Filipino comfort foods. But usually it’s chicken macaroni soup. For this recipe I added Moringa (popularly known as Malunggay among Filipinos) and corn. Why moringa? Because it’s a good source of calcium and my poor teeth deteriorated over the years and I badly need calcium. Why corn? Since I’ve added red bell pepper and malunggay, I wanted to put something yellow..PLus I love YELLOW CORN. Some healthy stuff in here too. 🙂
1.) 400 grams elbow or salad macaroni
2.) 1 pork cube
3.) I can Maling Lite ham (or any other ham..Purefoods ham is also good..or Spam)
4.) 1 large white onion
5.) 2 tbsp light butter
6.) 1 tsp ground black pepper
7.) 5 tbps patis (fish sauce).. You may use salt. Please adjust according to how salty yoy want the soup base to be.
8.) Probably about 10 stalk of malunggay
9.) 1 small red bell pepper
10.) 1/4 wongbook
11.) 10 cups water
12.) 1 big can evaporated milk
13.) 2 pcs pork cubes
14.) 1 corn cob. (kernels removed from the cub). I prefer fresh yellow corn, but canned can also be used if you don’t like to be bothered w/ cutting the corn.
1.) In a small (pre-heated) frying pan, sautee onions in butter and then add ham. (I dont heat the butter. I fry the onions w/ the butter because I don’t want burnt taste/smell on my onions). Fry for about 2 mins.
2.) On a large pot, boil 10 cups of water with pork cubes, ground pepper, fish sauce. Add the fried onions and ham and let wait to boil.
3.) When water boils, add the macaroni. Check if macaroni is half-cooked and put th corn kernels and let continue boiling.
3.) Last, put milk and veggies and let it boil for around 15-20 mins until the macaroni is cooked. Simmer for another 5 minutes.
